Catered Event - Karen
Karen enquired with us about designing and serving a Tasting menu for her husband’s 60th birthday.
We were to cook for 8 adults and two children, at their home.
Below is the menu we designed and prepared:
Canapés:
Beetroot gnudi, goats cheese mousse & nutmeg
Honey & soy glazed pork belly, cucumber & spring onion
Cornish ‘dressed crab’, avocado, heritage radish
Bread: Porcini knot, roasted fennel butter
Amuse: Butternut squash velouté, sesame & lemongrass
Starter: Smoked wood pigeon ham, celeriac remoularde, pickled elderberries, pistachio biscotti
Fish: Seared Gigha halibut, courgette & artichoke risotto, smoked aubergine, tomato caviar
Main: Cobnut crusted venison, damson jam, braised haunch potato croissant, Cotesbach brassicas
Dessert: Shawell toffee apple tart, blackberry sorbet
The children had homemade dough balls, chicken goujons with chunky chips and peas!
